If you love pancakes and are living gluten-free life, than this 2-ingredient recipe is perfect for you. It's so easy to make and what's even more important - it's delicious! I named them bancakes, because, well, they have a taste of bananas. Once you try them you won't want to eat 'normal' pancakes ever again. I assure you!
Ingredients (for 1 person):
- 1 banana
- 2 eggs
- a pinch of salt
Crush banana on a plate with a fork and mix it with eggs. Add raisins and a pinch of salt. Whisk all the ingredients with fork so you get a smooth texture.
Heat the pan (but not too much, I suggest you bake them on 7 or 8) and put on a little coconut oil. Take a little scoop of mixture and create small pancakes. Bake until golden brown, then flip. Do another round until you use all the mixture. At the end put all of them on the pan for a minute just to keep them warm.
Serve with peaches or jam of your taste. They're perfect for beakfast. Bon apetit!
